Here’s what our menu is looking like for week one of the All You Challenge!
Monday (day 1)
Breakfast: cereal
Lunch: mac n cheese with applesauce
Supper: Taco Night with chips n cheese as a side-yum!
Snacks: with three small kids snacks are really important! I try to make snacks fun and full of variety, while still staying healthy. Today our snacks were apples and fruit snacks (we ate these at the beach and my kids generously shared them with the sea gulls LOL!)
Tuesday
breakfast: cereal (we have 8 different kinds to chose from!)
lunch: Dinty Moore Beef Stew and buttered bread-one of my favorites!
supper: chicken ranch tacos using leftover shells, tomoato, onions, and sauce from the night before. It reduced waste and tasted great, especially with my homemade taco seasoning! My husband ate out with a buddy so this wonderful meal was just for me and the kids but that was fine, more for me
snacks: apples, bananas
Wednesday
breakfast: cereal or pop tarts
lunch: kids ate at grandmas while I did some errands and I had a game piece for a free Whopper at Burger King so I used that and bought a medium fry plus a free water so my oop was $2 including tax for the fry.
supper: Church picnic-FREE food and games!We had chicken breasts, pasta salads, rolls, homemade cookies, cheesy potatoes, and of course cotton candy, pop corn, and snow cones!
snacks: cherries, apples, saltine crackers
Thursday
breakfast-oatmeal
lunch-picnic at the park! Apples, crackers, cheese, pudding, juice
supper-Sub sandwiches. I don’t usually make these because it gets expensive but I’ve been buying the ingredients as they went on sale and finally have everything except for the buns. My brother in law is coming over tonight too so I’ll have an extra mouth to feed but I should be ok: sub buns (2.99 pkg), ham slices (from freezer-got it for 1.29 per pound a while back), pepperoni (sandwich cut kind that was on sale for $1 per package a few weeks ago), cheeses: Meijer has a great sale this week on their sandwich sliced cheeses-$1.49 per package of pepper jack, swiss, munster, cheddar, etc (all the kinds that usually don’t go on sale!). Everyone will build their own subs and then we melt them in the microwave-yummmmm
snacks-fishy crackers, bananas
Tonight we decided to hit our local fair grounds for the annual fair and of course, you can’t go to the fair without buying an elephant ear! But we just bought one and split it between the five of us so I’m happy with the $4 it cost. I planned ahead and brought bottled water-no point in spending $2 for it there!
Friday
breakfast: apples and dried blueberries (from Just Tomatoes-this stuff is awesome!)
lunch: peanut butter and jelly sandwiches and apples
supper: we went to a baseball game and hot dogs and drinks were included in the price of our tickets (we went with our church as a group).
snacks: crackers, pudding, apples again
Saturday
breakfast: home made chocolate chip muffins
lunch: pig n’ blankets, fries in our deep fryer
supper: kids had cereal and my husband and I went to Arbys (date night)
snacks: animal crackers, apples
